I like Ultraedit myself, but I'm lucky enough to have a copy provided by my work. There's a free one around that I can't remember the name of right this minute though. It's mentioned around here quite a bit.

I find Notepad++ to be excellent: http://notepad-plus.sourceforge.net/uk/site.htm

For use in Mac, text edit is perfect for .gdb files.

I'm using MacVim haha!

I switched development to a MacBook and couldn't find yet something equivalent to UltraEdit. I used VIM in a programming job in UK for two years, though I was never a advanced user. So I loaded up MacVim and still had some familiarity with it.

For example let's say you are editing the translation files (.trn) in Vim : move the cursor to any line (any column, doesnt matter) and type ci" (c - i - double quote) , that will find the first quoted string, empty its contents and then put the cursor inside after the first quote and put you in insert mode! Type the new text and press ESC. Move to another line, rinse repeat.
